This recipe is basically a lazy lasagna and it is so quick, so easy and DELICIOUS! It contains NO MEAT, so you can serve it to your vegetarian friends and family as well.
Shredded Mozzarella Cheese
Olive Oil (for cooking spinach)
Favorite Spaghetti Sauce
First, start cooking your Jumbo Shells by boiling them until al dente.
Next, cook your spinach with some olive oil until wilted
Combine cooked spinach, 1 cup ricotta cheese, ½ cup of parmesan cheese and mix until well incorporated.
Stuff each shell with some of the cheese mixture (it is fine if they are overflowing, but make sure you even them out so you don’t run out of cheese mixture)
Add one layer of spaghetti sauce to an oven safe dish, place stuffed shells on top, then add more spaghetti sauce over the top of the shells.
Add mozzarella cheese over the top and cook in the oven for 30-40 mins on 350, until the cheese is melted and gooey.
Top with fresh basil and serve with garlic bread!
